Method

Chill a coupe glass and a shot glass.

Add the vanilla vodka, Passoã, passion fruit purée, lime juice and vanilla syrup to a blender.

Add the crushed ice and blend on high until smooth and thick, about 20 seconds.

Pour into the chilled coupe — it should hold a soft peak.

Garnish with half a fresh passion fruit on the rim.

Serve with a chilled shot of prosecco on the side.
Bartender's note
Use frozen passion fruit purée if possible. It gives the drink a colder, thicker texture without requiring too much ice and therefore preserves the flavour.
