Method

Chill a coupe glass and a shot glass.

Add the vanilla vodka, Passoã, passion fruit purée, lime juice, vanilla syrup and the pulp of half a passion fruit to a shaker.

Fill with ice and shake hard for 12–15 seconds until well chilled and foamy.

Double strain into the chilled coupe.

Float the remaining passion fruit half on top.

Pour the chilled prosecco into the shot glass and serve alongside.
Bartender's note
Shake hard with plenty of ice for the signature foam. Sip the drink, then chase with the prosecco — or pour it in.
